Sticky Rice Cakes (Ciba): Warm, Chewy, Hearty Street Snack
Glutinous rice cake, also known as ciba in Chinese, is a popular street snack in some parts of China. It’s made from sticky glutinous rice, and pounded repeatedly into a paste before it’s steamed.
It’s tough work, so fewer people make handmade sticky rice cakes nowadays. We visited Wang’s Handmade Sticky Rice Cake (王记手工糍粑) in Guizhou, to learn more about this hearty street snack.
